Grandma Hill’s Baked Chicken (or Turkey Wings)

Ingredients

1 whole organic chicken (or chicken pieces)

4 stalks of organic celery

2 tablespoons of organic Italian seasoning

2 teaspoons kosher salt

1/2 teaspoon black pepper

For whole chicken, use kitchen shears to cut in half down spine.  Season chicken with Italian seasoning, salt and pepper.

Place four stalks of celery in bottom of 9×12 baking dish.  Add enough water to cover bottom of pan.

Place seasoned chicken on top of celery and water.  Cover tightly with foil.

Bake on 350 for 1.5 hours (for whole chicken) or one hour for chicken pieces. DO NOT lift foil cover during this time.

After baking time, remove foil and turn oven up to broil.  Broil chicken for just a few minutes to brown.

**Preserve drippings for pan.  Makes terrific broth for other dishes!
