Middle Eastern Chicken Kebabs

Servings:  4-6

Prep Time:  20 minutes

Marinade Time:  8 hours or overnight

Cook Time:  15 minutes

Ingredients

2 tablespoons organic olive oil

2 teaspoons organic paprika

1/2 teaspoon organic cumin

1/8 teaspoon organic cinnamon

1 teaspoon organic crushed red pepper flakes (reduce amount if you want less spicy)

Zest and 2 tablespoons of juice from one freshly squeezed organic lemon

1-3/4 teaspoons kosher salt

1/2  teaspoon organic black pepper

5 cloves of organic garlic (minced/crushed)

2-1/2 pounds organic boneless skinless chicken thighs

1 large red or yellow organic onion, cut into chunks

  1. In a medium bowl, combine olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.

  2. Place chicken thighs in large storage bag and pour seasoning mixture over them.  Massage while in the bag and refrigerate for 8 hours or overnight.

  3. Using kitchen shears, cut chicken into 1/2 inch strips.  Thread chicken strips onto metal skewers, folding in sewing motion to stabilize on the skewer.  Alternate chicken with onion chunks. 

  4. Preheat grill to medium high heat.  Grill the chicken kebabs until golden brown and cooked through, turning skewers occasionally.  (approx. 10-15 minutes)
